It's rated at 7500lbs or so but in real world terms how heavy of a trailer could I tow without creating issues? It's the 4.7lt V8 (07).

I know with the F150, 5.4 triton and my 6x12 and three bikes in it going to nashville it did pretty good going up hills you would have to kick down a gear and we get about 12 mpg. I would have no problem going to a 7x16 tailer and 4 bikes but that is prob about the max. Anything over that and i would want a F250 and diesel
The F150 does have a full intake system and cat back exhaust, also upgraded brake pads and SS lines
The big thing is that the suspension is still level, my uncle hauled his boat for 2 years with an explorer and i thought the bumper would drag on big bumps.

Figure rougly 425 lbs per bike then all our gear and stuff we throw in there, is prob 1500 lbs

Never max out on your towing capacity without upgrades. If you are going to approach the weight limit you will need 2 upgrade brakes and suspension to be safe. Power may be nice but nobody is getting hurt if you get there slow.
On my SD F250 (3/4) I added a 5000lb air bag system to increase the weight capacity and level out the truck. You can alos do this with a weight distribution hitch and if you start getting over half definitely by 75% of tow capacity I would seriously plan on getting one or both of these
Over 3000lbs you need brakes on the trailer and an annual inspection. Although you still can hold the 5yr registration. Brakes on my 20footer are essenstial. On level or up grade not an issue, but I was coming down a hill headed to VIR on my first trip with it and had the brake controller turned down too low and I missed a turn to the next road cause I couldn't slow down enough. Get a good brake controller. Any of them work, but the extra bucks for a better one is nice. They add features that are not essential but make for a smoother ride in fast and slow traffic manuevers.

So would I likely be OK with a loaded towing weight of say 3750lbs? I was sort of looking at the tiny toy haulers like 15-18 foot jobs. I don't really want/need a big truck. I'm just farting around on the concept for now either way.

I would say you'd be ok. My Father in Law towwed his toy hauler with his Dakota pickup halfway across the country. The biggest thing would be making sure you get the trailer brakes set right with the brake box IMO. It's not so much pulling it at legal speeds but stopping the damn things I think.
We tow that 20 footer loaded to the gills for the band with a 3/4 ton van. The brake box is screwed up so I had to run them manually on downhills.

I think at that weight you are going to be putting a lot of strain on the motor, with a small V-8 in the durango. Especially pulling up and down the mountains going to beaver

i don't think so but I would guess that would be a good idea - supposedly Dodge transmissions suck.
